Which logs should we not look at? How can I solve this? Where can I look?

few posibilities:
1) problem with all devices = poller timeout - show SYSTEM STATS lines from your log
2) problem with single device = try to restart device, change snmp and ping timeouts and number of attempts

Ok, it isn't poller timeout.
Please show your cacti log, at least two poller cycles.

your poller time is 300 seconds. We need log from two poller cycles, so for example time from 08:00-8:10
